Para «celebrar» este día y en homenaje al Corte Inglés un delicioso brazo relleno de fresas con nata y cubierto de yema.A vuestra salud!!

INGREDIENTES:

Para la plancha de bizcocho:

  • 4 huevos
  • 130 gr. azúcar
  • 170 gr. harina
  • 2 cdtas. Royal
  • Un pellizco de sal
Para el relleno:
  • Fresas
  • Nata para montar
  • Azúcar
Para el jarabe:
  • 50 gr. moscatel
  • 3 cdas. agua
  • 50 gr. azúcar
Para la cobertura de yema:
  • 4 yemas de huevo
  • 100 gr. azúcar
  • 2/3 cdas. agua

ELABORACION:

Para el bizcocho:

  • Ponemos la mariposa en las cuchillas de la Thx. Vertemos los huevos y el azúcar. Programamos 2 min. 40º vel.4.
  • Batir otros 2 min. sin temperatura a la misma velocidad.
  • Incorporar la harina y la levadura junto con la sal. Programar 5 seg. Vel.3
  • Echar esta mezcla en la bandeja del horno forrada con papel de hornear. Dejarla bien extendida, uniforme y lisa. Introducirla en el horno precalentado a 180º durante 10 ó 15 min.
  • Desmoldar sobre un paño húmedo. Enrollarlo y dejarlo enfríar.
Para el jarabe:

Poner en el vaso los ingredientes. Programar 3 min. 100º Vel.4. Reservar.

Para el relleno:

  • Cortar en trocitos las fresas y mezclar con cuidado. Dejar en la nevera
  • Para la cobertura:Hacer un almíbar fino con el agua y el azúcar. Retirar del fuego y añadirle con cuidado una yema. Revolver bien. Poner otra vez al fuego (bajito) e ir vertiendo las yemas una a una sin dejar de remover. Dejar cocer unos minutos removiendo todo el tiempo y sin que llegue a hervir. Retirar del fuego.
Montaje:

Desdoblamos el bizcocho. Lo pincelamos con el jarabe, y lo vamos rellenando a los pocos y doblando. Dejar reposar con el pliegue hacia abajo. Meter en la nevera. Cuando tengamos la yema hecha, y con ayuda de un pincel, procedemos a cubrir todo el brazo. Adornamos con nata, merengue, fresas, etc. Refrigeramos.

SAINT VALENTINE’S ROULADE

Just to «celebrate» this day, try this sponge cake filled with cream and strawberries and covered with a sweet egg yolks cream.

INGREDIENTS:

For the cake:

  • 4 eggs
  • 130 gr. sugar
  • 170 gr. wheat flour
  • 2 cdtas. baking powder
  • A pinch of salt
For the filling:
  • Strawberries
  • Whipping cream
  • Sugar
To damp the cake:
  • 50 gr. sweet wine
  • 3 cdas. water
  • 50 gr. sugar
For the covering:
  • 4 egg yolks
  • 100 gr. sugar
  • 2/3 tbsp. water
COOKING:

Sponge cake:

  • With the help of the butterfly in Vorwerk’s Thermomix, pour the eggs and the sugar. Select 2 min. 40ºC Speed 4.
  • Whisk another 2 min. without temperature at same speed.
  • Add the flour and baking powder mixed with salt. Select 5 seg. Speed.3
  • Pour in the prepared tin and smooth level. Bake in a 180ºC pre-heated oven for 10 or 15 min.
  • Put the tin on a wire rack and cover with a clean damp tea towel and leave overnight with the roulade shape.
Moisten:

Put all the ingredients in the thermomix and select 3 min. 100º C Speed 4. Leave aside.

Filling:

  • Whip the cream until stiff with sugar and stabilizer.
  • Finely grate the strawberries and fold with the cream. Let cool.
Covering:

Make a syrup with the sugar and water. Leave out heat and add very carefully one egg yolk. Stir and put again on heat, very low and add the rest of egg yolks one at a time stirring evenly. Cook for some minutes without boiling.

FINALLY:

Remove the tea towel from the roulade. Moisten with the syrup and spread the filling over the roulade. Roll up using the paper to help you. Refrigerate. Cover with the egg yolk spreading.

Decorate with cream, strawberries, chocolate…Keep it cool.
